  • 1 pound (450 g) ground beef, 80% lean
  • 1 medium onion, finely chopped (half for patties, half for gravy)
  • ½ cup (about 60 g) bread crumbs, plain or seasoned
  • ½ cup (120 ml) milk, whole or 2%
  • 1 large egg, room temperature
  • ½ teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 2 cups (480 ml) beef broth, low sodium preferred
  • 2 tablespoons (30 g) unsalted butter
  • 3 tablespoons (24 g) all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of dried thyme or parsley

Instructions

  1. Finely chop 1 medium onion. Separate half (about ½ cup) for caramelizing and half for the patties. Soak ½ cup bread crumbs in ½ cup milk for 5 minutes until softened.
  2. In a large bowl, combine ground beef, soaked bread crumbs, ½ finely chopped onion, egg, garlic powder, Worcestershire sauce, salt, and black pepper. Mix gently with your hands without overworking.
  3. Divide mixture into 4 equal portions and shape into oval patties about ¾ inch (2 cm) thick. Set aside.
  4. Heat 1 tablespoon butter in a large skillet over medium heat. Add remaining chopped onions and a pinch of salt. Cook, stirring occasionally, for 8-10 minutes until golden and soft. Remove onions and set aside.
  5. Add remaining 1 tablespoon butter to skillet. Increase heat to medium-high. Brown patties on each side for 3-4 minutes until a deep crust forms. Transfer patties to a plate.
  6. Lower heat to medium. Sprinkle flour into the pan with drippings, stirring constantly to form a roux. Cook for 1-2 minutes until golden but not burnt.
  7. Gradually whisk in beef broth, scraping up browned bits. Stir in caramelized onions and Worcestershire sauce. Simmer for 3-4 minutes until thickened.
  8. Return patties to skillet, spoon gravy over them. Cover and simmer on low for 10 minutes or until patties reach 160°F (71°C).
  9. Taste gravy and season with salt and pepper if needed. Sprinkle with chopped parsley or thyme if desired.
  10. Serve hot with extra gravy over patties, alongside mashed potatoes or buttered noodles.

Notes

Do not overmix the meat to keep patties tender. Use medium heat for browning to avoid burning. Caramelize onions slowly for best flavor. If gravy thickens too much, whisk in a splash of broth or water. Patties should reach 160°F (71°C) internal temperature for safety.
