Instructions

  1. Rinse the cabbage and carrots well. Use a sharp knife or mandoline to shred the cabbage into thin strips—about 4 cups. Peel and shred the carrots to get about 1 cup. Place both in a large mixing bowl.
  2. In a smaller bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons apple cider vinegar, 1 tablespoon granulated sugar, 1 teaspoon Dijon mustard, and 1/2 teaspoon celery seed (if using). Season with a pinch of salt and pepper. Taste and adjust sugar or vinegar to your preference.
  3. Pour the dressing over the shredded veggies. Using tongs or clean hands, gently toss everything until evenly coated. Avoid over-mixing to keep the cabbage crisp.
