  • 1 cup homemade or store-bought croutons
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 teaspoons anchovy paste
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup mayonnaise
  • 1/3 cup extra virgin olive oil
  • 1/4 cup freshly grated Parmesan cheese (for dressing)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse the romaine lettuce thoroughly under cold water, then dry it well using a salad spinner or clean kitchen towels. Tear the leaves into bite-sized pieces and place them in a large salad bowl.
  2. In a small bowl, combine minced garlic, anchovy paste, Dijon mustard, fresh lemon juice, and Worcestershire sauce. Whisk together until smooth.
  3. Stir in the mayonnaise and olive oil gradually, whisking until the dressing becomes creamy and smooth. Fold in the grated Parmesan cheese. Taste and season with salt and freshly ground black pepper.
  4. Pour about two-thirds of the dressing over the romaine and croutons. Toss gently but thoroughly to coat every leaf. Add more dressing if desired.
  5. Sprinkle the remaining grated Parmesan cheese over the top. Optionally add freshly ground black pepper or extra croutons for garnish. Serve immediately.

Notes

Dry lettuce thoroughly to avoid soggy salad. Anchovy paste is essential for authentic flavor but can be substituted with soy sauce or capers for a vegetarian version. Homemade croutons add best crunch and flavor. Dressing can be made up to two days ahead and stored in the fridge.
