A quick and easy recipe for crispy, cheesy Brussels sprouts made in the air fryer using a smashing technique for extra crunch and flavor.

  • 1 pound (450g) Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 teaspoon garlic powder
  • ¾ teaspoon salt (kosher salt preferred)
  • ½ teaspoon freshly ground black pepper
  • ¼ cup (25g) finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • Optional: ¼ teaspoon smoked paprika or chili flakes

Instructions

  1. Trim and halve the Brussels sprouts. Rinse and pat dry thoroughly.
  2. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  3. In a mixing bowl, toss the halved Brussels sprouts with olive oil, garlic powder, salt, and black pepper until evenly coated.
  4. Arrange the sprouts cut-side down on a baking sheet or large plate. Use a potato masher or sturdy spatula to gently press down and flatten each sprout without pulverizing.
  5. Place the smashed sprouts in a single layer in the air fryer basket, cut side up, leaving space between them.
  6. Air fry at 400°F (200°C) for 12-15 minutes, shaking or flipping halfway through for even cooking.
  7. In the last 2 minutes, sprinkle the grated Parmesan over the sprouts and continue air frying until the cheese melts and turns golden brown.
  8. Serve immediately while hot and crispy.

Notes

If your air fryer basket tends to stick, lightly spray with cooking oil before placing the sprouts. Avoid overcrowding the basket and work in batches for maximum crispiness. For extra garlic flavor, add a minced clove tossed with the oil before air frying. To reheat leftovers, use the air fryer at 350°F (175°C) for 3-5 minutes to regain crispiness.
