  • 4 slices back bacon (thick-cut recommended)
  • 4 medium pork sausages (good-quality, lightly seasoned)
  • 4 large free-range eggs (room temperature)
  • 1 can baked beans (about 14 oz / 400g), warmed
  • 2 slices black pudding (optional)
  • 7 oz (200g) sliced mushrooms (button or chestnut)
  • 2 medium tomatoes, halved
  • 4 slices white bread (farmhouse or sourdough preferred)
  • 2 tbsp unsalted butter (softened)
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat a large non-stick pan on medium heat and add 1 tbsp vegetable oil. Warm for about 2 minutes until shimmering but not smoking.
  2. Add 4 pork sausages to the pan and cook for 12-15 minutes, turning regularly for even browning until golden and cooked through (internal temp around 160°F).
  3. Push sausages to one side and add 4 slices of back bacon and 2 slices of black pudding. Fry for 3-4 minutes per side until bacon edges are crispy and black pudding is slightly charred. Remove black pudding carefully.
  4. In the same pan, add sliced mushrooms and halved tomatoes cut-side down. Season lightly with salt and pepper. Cook mushrooms for about 5 minutes until golden and juicy; tomatoes should soften and caramelize slightly after 3-4 minutes.
  5. Warm baked beans in a small saucepan or microwave until hot, stirring occasionally.
  6. Toast 4 slices of bread to preference and spread with butter while warm.
  7. In a smaller non-stick pan, melt a small knob of butter over medium-low heat. Crack in 4 eggs and cook gently for 3-4 minutes for sunny side up, or flip carefully for over-easy eggs with runny yolks.
  8. Assemble the plate with sausages, bacon, black pudding, mushrooms, tomatoes, eggs, warm baked beans, and buttery toast. Season everything with a final pinch of salt and pepper.

Notes

Use medium heat to avoid burning bacon and drying eggs. Turn sausages regularly for even browning. Cook eggs last for best texture. Drain excess bacon fat if pan becomes too greasy. Do not overcrowd the pan; cook in batches if needed. Season mushrooms and tomatoes early, and season eggs and meat just before serving. Black pudding is optional and should be seared quickly to avoid crumbling. Vegetarian and dietary substitutions are suggested in the recipe.
