  • 1 teaspoon salt, or to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut 2 pounds of Yukon Gold or red potatoes into wedges about 1 to 1.5 inches thick.
  3. Parboil the potatoes in a large pot with salted cold water. Bring to a boil, then simmer for 8-10 minutes until edges soften but potatoes are not fully cooked. Drain and let steam dry for a few minutes.
  4. In a large mixing bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, salt, and black pepper.
  5. Add the parboiled potatoes to the marinade and toss gently to coat evenly.
  6. Arrange the potatoes in a single layer in a 9×13 inch baking dish. Pour broth around the edges of the pan, avoiding pouring over the potatoes.
  7. Roast in the preheated oven for 40-45 minutes, flipping the potatoes halfway through (around 20-25 minutes), until golden and crispy.
  8. Sprinkle chopped fresh parsley over the potatoes and toss gently to distribute.
  9. Serve hot immediately.
