  • 46 bone-in, skin-on chicken thighs (about 2 pounds / 900g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/4 cup (60ml) water or chicken broth
  • Pinch of red pepper flakes (optional)
  • Green onions or fresh parsley for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of oil. Wait until the oil shimmers but is not smoking.
  3. Place chicken thighs skin-side down in the pan without overcrowding. Cook undisturbed for 7-8 minutes until the skin is deep golden and crispy. Flip and cook the other side for 5 minutes.
  4. Remove chicken thighs from the pan and set aside.
  5. Lower heat to medium. Add minced garlic to the pan and stir quickly for about 30 seconds until fragrant.
  6. Add honey, soy sauce, vinegar, and water or broth. Stir to combine and simmer for 2-3 minutes until slightly thickened and glossy.
  7. Return chicken thighs to the pan skin-side up, spoon glaze over the top, cover with a lid or foil, and simmer gently for 8-10 minutes until internal temperature reaches 165°F (74°C) and sauce thickens.
  8. Remove lid and cook uncovered for 2 minutes to caramelize the sauce around the edges.
  9. Garnish with sliced green onions or fresh parsley before serving.

Notes

Pat chicken dry before seasoning for maximum crispiness. Do not overcrowd the pan to avoid steaming. Stir garlic quickly to prevent burning. Adjust sauce thickness by adding water or simmering longer uncovered. For gluten-free, substitute soy sauce with tamari. For vegan option, use tofu thighs and adjust cooking time.
