  • 2 pounds Yukon Gold or red potatoes, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes. Cut into roughly 1-inch cubes.
  3. In a large mixing bowl, toss the potatoes with olive oil, minced garlic, salt, and black pepper until well coated.
  4. Add chopped rosemary, thyme leaves, and freshly grated Parmesan cheese. Toss again to combine thoroughly.
  5. Spread the potatoes in a single layer on a rimmed baking sheet lined with parchment paper or lightly greased.
  6. Roast in the preheated oven for 20 minutes.
  7. Flip the potatoes gently using a spatula or tongs to ensure even browning.
  8. Return to the oven and roast for another 15-20 minutes until golden brown and crispy, and tender inside.
  9. Remove from oven and immediately sprinkle with chopped fresh parsley and red pepper flakes if desired.
  10. Serve warm.

Notes

Dry potatoes thoroughly before roasting to avoid steaming. Flip potatoes halfway through roasting for even crispiness. Use freshly grated Parmesan for best crust. Avoid overcrowding the baking sheet to ensure crisp edges. For dairy-free version, substitute Parmesan with nutritional yeast.
