  • 810 thin slices prosciutto (about 4 ounces or 115 grams)
  • 1 tablespoon olive oil
  • Salt and freshly cracked black pepper, to taste
  • For the Zesty Lemon Aioli:
  • ½ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 small garlic clove, finely minced or grated
  • ½ teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Rinse and pat dry the asparagus. Trim off the woody ends (about 1 inch).
  3. Toss asparagus with olive oil, salt, and freshly cracked black pepper in a mixing bowl.
  4. Wrap each asparagus spear spirally with one slice of prosciutto. Cut prosciutto slices in half lengthwise if needed for thinner spears.
  5. Arrange the wrapped spears in a single layer on the prepared baking sheet, leaving space between each.
  6. Roast in the oven for 12–15 minutes, turning halfway through, until prosciutto is golden and crispy and asparagus is tender but not mushy.
  7. While asparagus roasts, whisk together mayonnaise, lemon juice, lemon zest, garlic, Dijon mustard, salt, and pepper in a small bowl to make the lemon aioli.
  8. Serve the crispy prosciutto wrapped asparagus warm with the lemon aioli on the side for dipping.

Notes

Dry asparagus thoroughly before wrapping to ensure crispy prosciutto. Avoid overcrowding the baking sheet to prevent steaming. Watch the oven carefully as prosciutto can burn quickly. Make the lemon aioli fresh while asparagus roasts for best flavor. Leftovers can be refrigerated up to 2 days and reheated in the oven to maintain crispness. Avoid microwaving leftovers.
