  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: A squeeze of fresh lemon juice before serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. Cut into roughly 1-inch chunks.
  3. In a large bowl, combine ranch seasoning, chopped rosemary, thyme, minced garlic, salt, and pepper. Add olive oil and stir to form a marinade.
  4. Add potato chunks to the bowl and toss well to coat evenly.
  5. Spread the potatoes in a single layer on a baking sheet lined with parchment paper or a silicone mat.
  6. Roast for about 25 minutes, flipping the potatoes gently around the 15-minute mark for even browning.
  7. Check doneness by poking a potato with a fork; it should be tender inside and crispy on the edges.
  8. Optional: Squeeze fresh lemon juice over the potatoes and toss lightly before serving.
  9. Serve hot for best flavor and texture.
