  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • ¼ teaspoon ground black pepper
  • 1 tablespoon fresh cilantro, finely chopped (optional)

Instructions

  1. Peel the green plantains by cutting off the ends, slicing through the skin lengthwise, and peeling it off carefully. Slice each plantain into 1-inch thick rounds (about 12 pieces).
  2. Pour about 2 cups (480 ml) of vegetable oil into a heavy-bottomed frying pan or deep skillet and heat over medium-high heat to 350°F (175°C). Test by dropping a small piece of plantain; it should sizzle immediately.
  3. Carefully add the plantain slices to the hot oil in batches without overcrowding. Fry for 2-3 minutes per side until golden but not too dark. Remove with a slotted spoon and place on paper towels to drain.
  4. Use a plantain press or the bottom of a flat glass to gently press each fried slice until about half an inch thick, being careful not to break them.
  5. Return the smashed plantains to the hot oil and fry for another 2-3 minutes per side until crisp and golden brown. Remove and place on paper towels; immediately sprinkle with salt while still hot.
  6. In a small bowl, combine ½ cup mayonnaise, 4 minced garlic cloves, 1 tablespoon fresh lime juice, 1 tablespoon olive oil, and ¼ teaspoon ground black pepper. Mix well and adjust seasoning to taste. Add finely chopped cilantro if desired.
  7. Serve the crispy tostones warm with the garlic dipping sauce on the side.
