A quick and fun pizza lunchable with mini pizza crusts, melty cheese, savory toppings, and a tangy homemade dipping sauce, perfect for kids’ lunches and busy families.

  • 4 mini pizza crusts (34 inches each), store-bought or homemade
  • 1 cup shredded mozzarella cheese (about 100g)
  • 2025 mini pepperoni slices (or substitute with diced cooked chicken or veggies)
  • ½ cup cherry tomatoes, halved
  • A handful fresh basil leaves, roughly torn (optional)
  • 1 tablespoon olive oil (for brushing crusts)
  • ½ cup canned tomato sauce (120ml)
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Pinch of sugar
  • Salt and pepper to taste
  • 1 teaspoon olive oil (for dipping sauce)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Brush the mini pizza crusts lightly with olive oil on both sides. Place them on the baking sheet.
  3. Bake the crusts for 5-7 minutes until golden and crisp.
  4. While the crusts bake, prepare the dipping sauce: In a mixing bowl, combine tomato sauce, dried oregano, garlic powder, onion powder, sugar, salt, pepper, and olive oil. Whisk until smooth and adjust seasoning if needed.
  5. Remove crusts from oven and let cool slightly on a wire rack.
  6. Assemble the mini pizzas: sprinkle about 2 tablespoons (20g) shredded mozzarella on each crust, add 5-6 mini pepperoni slices and halved cherry tomatoes, and scatter torn basil leaves if using.
  7. Return assembled pizzas to the oven for another 5 minutes until cheese melts and bubbles.
  8. Cool pizzas completely to room temperature before packing.
  9. Pack pizzas in one compartment of a bento box. Pour dipping sauce into a small container with a lid and place alongside.
  10. Add extra sides like carrot sticks or fruit to fill out the lunchbox.

Notes

Brush crusts with olive oil before baking to keep them crisp. Let pizzas cool completely before packing to avoid sogginess. The dipping sauce can be served cold or warmed slightly. Customize toppings and crusts for dietary needs or preferences.
