Easy Gooey S’mores Banana Boats - featured image

A quick and easy grilled dessert combining ripe bananas, chocolate, and marshmallows for a nostalgic, gooey treat perfect for summer gatherings.

Ingredients

Scale
  • 2 firm but ripe bananas (yellow with a few brown spots)
  • 1/4 cup semi-sweet chocolate chips or chunks
  • 1/4 cup mini marshmallows
  • 1 tablespoon unsalted butter, softened
  • 1 teaspoon brown sugar
  • Optional: chopped nuts (walnuts or pecans)
  • Optional: dash of cinnamon

Instructions

  1. Preheat your grill to medium heat (around 350°F/175°C).
  2. Using a sharp knife, slice the banana peel lengthwise about halfway through to create a pocket without cutting all the way through the banana.
  3. Gently pry the peel apart to form a groove.
  4. Add a pat of softened butter inside the groove, then sprinkle a teaspoon of brown sugar over it.
  5. Layer in chocolate chips or chunks evenly, followed by mini marshmallows. Sprinkle nuts or cinnamon if using.
  6. Optionally, wrap each banana tightly in aluminum foil for a softer, steamed finish.
  7. Place the bananas on the grill over indirect heat. Close the lid and cook for about 8–12 minutes, checking occasionally until marshmallows puff and turn slightly golden and chocolate melts.
  8. Use tongs to carefully remove the banana boats from the grill. Let cool for a minute or two, then serve directly in the peel with a spoon or fork.

Notes

Use medium heat to avoid burning marshmallows. Wrapping in foil creates a steamed finish and softens the peel. For a nut-free version, omit nuts. Vegan versions can use dairy-free chocolate, vegan marshmallows, and coconut oil instead of butter. You can also bake in the oven at 375°F for 10 minutes as an alternative.
