  • 10 ounces (280 grams) marshmallows (about 40 large or two 10-ounce bags of mini marshmallows)
  • 3 tablespoons (43 grams) unsalted butter, softened
  • 1 cup (175 grams) mini chocolate chips (semi-sweet preferred)
  • 1 teaspoon vanilla extract
  • Non-stick cooking spray or butter for greasing

Instructions

  1. Lightly grease a large mixing bowl and your hands with non-stick spray or butter to prevent sticking. Line a baking sheet with wax or parchment paper.
  2. In a medium saucepan over low heat, melt 3 tablespoons (43 grams) of unsalted butter, stirring gently for 2-3 minutes to avoid browning.
  3. Add 10 ounces (280 grams) of marshmallows to the melted butter. Stir continuously until completely melted and smooth, about 4-5 minutes. Remove from heat and stir in 1 teaspoon vanilla extract.
  4. Pour 6 cups (150 grams) of Rice Krispies cereal into the melted marshmallow mixture. Stir quickly but gently to coat all the cereal evenly without crushing it.
  5. While the mixture is warm but cool enough to handle (about 5 minutes), grease your hands and scoop out about 2 tablespoons (30 grams) of the mixture. Roll into smooth balls roughly the size of a golf ball. Place on the prepared baking sheet. Repeat until all mixture is used.
  6. Press mini chocolate chips gently onto each ball in a soccer ball pattern. Use a toothpick if needed to adjust placement.
  7. Allow the soccer balls to cool and firm up at room temperature for about 30 minutes, or refrigerate for 15 minutes for quicker setting.
  8. Serve fresh or store in an airtight container at room temperature for up to 3 days.
