  • 4 small flour or corn tortillas, warmed

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the chicken breasts into thin strips about ½ inch thick. Slice the bell peppers and onion into similar-sized strips.
  3. In a large mixing bowl, whisk together olive oil, garlic powder, smoked paprika, cumin, chili powder, salt, and black pepper.
  4. Add the chicken strips, bell peppers, and onion slices to the bowl and toss thoroughly until evenly coated with the seasoning mixture.
  5. Spread the chicken and vegetables in a single layer on a rimmed baking sheet, avoiding overcrowding.
  6. Roast in the preheated oven for 18-20 minutes, flipping the chicken and stirring the veggies halfway through (around 10 minutes).
  7. Check that the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender with slightly charred edges. Cook an additional 2-3 minutes if needed.
  8. Remove from oven and immediately squeeze fresh lime juice over the chicken and vegetables. Toss lightly to combine.
  9. Warm the tortillas in a dry skillet or wrapped in foil in the oven for 2-3 minutes while the chicken rests.
  10. Serve the chicken and veggie filling on warm tortillas with your favorite toppings and enjoy immediately.
