Instructions

  1. Prepare the buffalo chicken: In a small saucepan over low heat, melt the unsalted butter. Stir in buffalo sauce until combined and warm (about 2-3 minutes). Toss shredded chicken in the sauce until evenly coated. Set aside.
  2. Make the blue cheese dressing: In a medium bowl, whisk together mayonnaise, sour cream, lemon juice, Worcestershire sauce, salt, and pepper. Stir in blue cheese crumbles gently, then add buttermilk 1 tablespoon at a time until creamy but pourable. Refrigerate until assembling salad.
  3. Prepare the salad base: Chop romaine lettuce and combine with arugula in a large bowl. Add sliced celery, halved cherry tomatoes (if using), and sliced red onion. Toss gently.
  4. Assemble the salad: Arrange dressed buffalo chicken over the mixed greens. Drizzle blue cheese dressing over the top or serve on the side. Garnish with extra blue cheese crumbles and chopped parsley or chives.
  5. Serve immediately for best texture. If prepping ahead, keep dressing separate until serving.
