  • 1 pound large shrimp, peeled and deveined (fresh or thawed frozen shrimp)
  • 12 ounces dried or fresh fettuccine pasta
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 5 cloves garlic, finely minced
  • ½ cup dry white wine (such as Sauvignon Blanc), optional
  • 2 tablespoons fresh lemon juice
  • ¼ teaspoon red pepper flakes, optional
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces of fettuccine and cook according to package instructions, usually 10 to 12 minutes, until al dente. Reserve about ½ cup pasta water, then drain the pasta and set aside.
  2. While the pasta cooks, pat dry 1 pound of peeled and deveined shrimp with paper towels. Season lightly with salt and pepper.
  3. Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook about 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Lower heat to medium. Add remaining 2 tablespoons butter and minced garlic to the skillet. Sauté for 1 to 2 minutes until fragrant and lightly golden, being careful not to burn the garlic.
  5. Pour in ½ cup dry white wine to deglaze the pan, scraping up browned bits. Simmer for 2 to 3 minutes until reduced by half. Stir in 2 tablespoons fresh lemon juice and ¼ teaspoon red pepper flakes if using.
  6. Return cooked shrimp to the skillet along with drained fettuccine. Toss gently to coat in the sauce. Add reserved pasta water a tablespoon at a time if sauce is too thick. Season with additional salt and pepper to taste.
  7. Remove from heat. Sprinkle chopped fresh parsley over the top and toss lightly. Serve immediately with freshly grated Parmesan cheese if desired.

Notes

Dry shrimp well before cooking to ensure a good sear and avoid rubbery texture. Cook garlic gently to avoid burning. Reserve pasta water to adjust sauce consistency. White wine can be substituted with chicken or vegetable broth plus lemon juice for a non-alcoholic option.
