Ingredients

  • Classic beef or pork hot dogs (or chicken/plant-based sausages for variations)
  • Soft fresh buns (brioche buns optional)
  • Yellow mustard
  • Ketchup
  • Sweet pickle relish
  • Coleslaw: 2 cups shredded green cabbage, 1/2 cup shredded carrot, 1/4 cup mayonnaise, 1 tablespoon apple cider vinegar, 1 teaspoon sugar, pinch of salt and pepper
  • Spicy chili: 1 tablespoon oil, 1/2 cup diced onions, 2 cloves minced garlic, 8 ounces ground beef or turkey, 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon paprika, 1 cup canned diced tomat…
  • Pickled jalapeños: 2 fresh jalapeños sliced thin, 1/4 cup white vinegar, 1 teaspoon sugar, 1/2 teaspoon salt
  • Additional toppings: diced onions (raw or caramelized), shredded cheddar cheese, chopped fresh cilantro, lime wedges

Instructions

  1. Prepare the coleslaw by mixing shredded cabbage, carrot, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a large bowl. Refrigerate for at least 15 minutes.
  2. Make the chili topping by heating oil in a saucepan over medium heat. Cook diced onions and garlic until softened. Add ground meat and cook until browned.
  3. Stir in chili powder, cumin, paprika, diced tomatoes, and kidney beans. Simmer uncovered for 15-20 minutes until thickened. Season with salt and pepper.
  4. Pickle the jalapeños by mixing vinegar, sugar, and salt in a bowl. Add jalapeño slices and let sit while cooking hot dogs.
  5. Grill hot dogs on medium-high heat for 5-7 minutes, turning occasionally until charred and heated through. Toast buns lightly on the grill.
  6. Assemble hot dogs: classic with mustard, ketchup, and relish; slaw version with coleslaw and cilantro; chili dog with chili, pickled jalapeños, diced onions, and cheddar cheese.
  7. Serve immediately for best texture and flavor.

Notes

Do not overcook hot dogs to avoid dryness. Toast buns lightly to prevent sogginess. Make chili and coleslaw a day ahead for better flavor. Adjust chili thickness by simmering longer. For smoky flavor, add smoked paprika or chipotle powder. Use gluten-free buns and vegan substitutes as needed.
