  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard

  • 1/4 cup sour cream (full-fat recommended, or Greek yogurt as a lighter swap)
  • 2 tablespoons fresh chives, finely chopped
  • Pinch of salt

Instructions

  1. Place 6 large eggs in a single layer in a large pot. Cover with cold water about 1 inch above the eggs. Bring to a rolling boil over medium-high heat (about 10 minutes). Immediately remove from heat and transfer eggs to an ice water bath for 5-10 minutes to cool rapidly and stop cooking.
  2. Gently tap eggs on the counter to crack the shell, then peel under running cold water to help remove stubborn bits. Pat dry with paper towels.
  3. Slice eggs in half lengthwise. Carefully scoop out yolks into a medium bowl. Mash yolks with a fork until crumbly.
  4. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon white vinegar, 1 teaspoon smoked paprika, and salt and pepper to taste. Mix until smooth and creamy. Taste and adjust seasoning if needed.
  5. In a small bowl, combine 1/4 cup sour cream with 2 tablespoons finely chopped fresh chives and a pinch of salt. Stir well and refrigerate until ready to use.
  6. Using a small spoon or piping bag, fill each egg white half with the yolk mixture. Aim for a generous but neat mound.
  7. Dollop or pipe a small amount of chive cream on each filled egg half. Finish with a light dusting of smoked paprika for color and flavor.
  8. Refrigerate deviled eggs for at least 30 minutes to let flavors meld and the filling set slightly.

Notes

Use slightly older eggs for easier peeling. Cooling eggs quickly in an ice bath prevents green rings and makes peeling easier. For a smoother yolk filling, push yolks through a fine-mesh sieve before mixing. Use good quality smoked paprika for authentic flavor. Chive cream should be made fresh and chilled. Piping the filling looks neat but a spoon works fine. For dairy-free, swap sour cream with coconut cream and use vegan mayo. For a spicy twist, substitute smoked paprika with chipotle powder.
