  • 2 cups (360g) short-grain Japanese rice, rinsed and cooked
  • 1/4 cup (60ml) rice vinegar, seasoned with 2 tbsp sugar and 1 tsp salt
  • 8 oz (225g) sashimi-grade fresh salmon, thinly sliced
  • 4 full toasted nori sheets, cut in half
  • 1 ripe avocado, sliced
  • 1/2 cucumber, julienned
  • A small handful fresh cilantro or parsley, chopped
  • 2 tbsp Japanese mayonnaise (e.g., Kewpie)
  • Wasabi paste, optional, to taste
  • Soy sauce or tamari for dipping
  • 1 tbsp toasted sesame seeds

Instructions

  1. Rinse 2 cups (360g) short-grain Japanese rice under cold water until water runs clear. Drain well.
  2. Cook rice in a rice cooker or pot with 2 1/2 cups (600ml) water for 20-25 minutes. Let rest covered for 10 minutes.
  3. While rice cooks, combine 1/4 cup (60ml) rice vinegar, 2 tbsp sugar, and 1 tsp salt until dissolved.
  4. Transfer hot rice to a wide bowl and gently fold in vinegar mixture with a rice paddle or wooden spoon, fanning to cool for about 5 minutes.
  5. Slice 8 oz (225g) sashimi-grade salmon into thin strips about 3 inches long. Keep chilled until assembly.
  6. Slice avocado, julienne cucumber, chop cilantro or parsley, and toast sesame seeds in a dry pan over medium heat for 1-2 minutes.
  7. Mix 2 tbsp Japanese mayo with a dab of wasabi paste if desired.
  8. Take a half sheet of toasted nori (shiny side out), wet fingers with water to prevent sticking, and spread about 1/4 cup (60g) sushi rice diagonally on the left side.
  9. Add salmon strips, avocado slices, cucumber, chopped cilantro, drizzle wasabi mayo, and sprinkle toasted sesame seeds.
  10. Roll nori into a cone shape starting from the rice edge, rolling tightly but gently. The cone should be open at the top and closed at the bottom.
  11. Serve immediately with soy sauce or tamari for dipping.

Notes

Use sashimi-grade salmon from a trusted source. Wet your hands with water or vinegar water to prevent rice from sticking. Serve immediately to keep nori crisp. Toast nori lightly if it becomes soft. Avoid overfilling rolls to keep them neat. For low-carb, substitute rice with quinoa or cauliflower rice. For vegetarian, swap salmon with marinated tofu or grilled mushrooms.
