  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon chili flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley or dill (optional)
  • 2 tablespoons milk or cream (dairy or dairy-free alternative)
  • Feta cheese crumbles for topping (optional)

Instructions

  1. Dice the tomatoes, red bell pepper, and finely chop the onion and garlic (about 5 minutes).
  2. Heat 2 tablespoons olive oil in a 10-inch non-stick skillet over medium heat. Add onions and bell peppers and sauté gently for 5-7 minutes until softened and translucent.
  3. Add minced garlic, ground cumin, smoked paprika, and chili flakes. Cook for 1-2 minutes until fragrant.
  4. Add diced tomatoes and a pinch of salt. Cook for 5-6 minutes, stirring occasionally, until tomatoes break down into a chunky sauce. Add a splash of water if too dry.
  5. In a mixing bowl, whisk 6 eggs with 2 tablespoons milk or cream, salt, and pepper until light and frothy.
  6. Lower heat to medium-low. Pour egg mixture over the tomato and pepper base. Let sit undisturbed for 30 seconds.
  7. Gently stir eggs with a wooden spoon or silicone spatula in a slow folding motion, allowing soft curds to form. Cook for 5-7 minutes, avoiding high heat.
  8. When eggs are just set but still moist, sprinkle chopped parsley or dill and add feta cheese if desired. Remove from heat and let rest for 1 minute.
  9. Serve immediately on warm plates or toasted bread.
