  • Creamy fresh mozzarella balls (bocconcini or ciliegine), drained and patted dry
  • Cherry or grape tomatoes, washed and dried
  • Fresh basil leaves, whole and vibrant green
  • ½ cup balsamic vinegar
  • 1 tablespoon brown sugar
  • Extra virgin olive oil (optional, for drizzling)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Wooden or bamboo skewers, about 4 inches long

Instructions

  1. Prepare the balsamic glaze: In a small saucepan over medium heat, combine ½ cup (120 ml) of balsamic vinegar with 1 tablespoon (12 g) of brown sugar. Stir frequently to dissolve the sugar. Let it simmer gently for 8-10 minutes until the mixture thickens and reduces by about half, forming a shiny, syrupy texture. Add a splash of water if it gets too thick.
  2. Dry the mozzarella and tomatoes thoroughly using a colander or salad spinner, then pat dry with paper towels to remove excess moisture.
  3. Assemble the skewers by threading a cherry tomato first, followed by a fresh basil leaf (folded if large), then a mozzarella ball. Repeat if the skewer is long enough or keep one set per skewer.
  4. Arrange the skewers neatly on a serving platter, spacing them for even glaze drizzling.
  5. Drizzle the skewers lightly with the balsamic glaze using a spoon or drizzle bottle. Optionally, add a few drops of extra virgin olive oil and sprinkle with salt and freshly ground black pepper.
  6. Garnish with extra basil leaves and freshly cracked black pepper if desired. Serve immediately or refrigerate up to 2 hours before serving.

Notes

Dry ingredients well to prevent sogginess. Simmer balsamic glaze gently to avoid bitterness. Assemble skewers just before serving and add glaze last to keep them fresh. The glaze can be made ahead and stored refrigerated for up to a week. For vegan option, substitute mozzarella with vegan cheese or marinated tofu cubes. Optionally add crushed red pepper flakes to glaze for heat or grill skewers briefly for smoky flavor.
