Instructions

  1. Prepare the cucumbers: Wash and dry the cucumbers. Using a mandoline or sharp knife, slice them lengthwise into thin ribbons about 1/8 inch (3 mm) thick. Lay the ribbons flat on a clean towel or paper towels to absorb excess moisture.
  2. Make the cream cheese filling: In a mixing bowl, combine the softened cream cheese with finely chopped dill, lemon juice, garlic powder (if using), salt, and pepper. Mix thoroughly until smooth and creamy. Adjust seasoning to taste.
  3. Assemble the roll-ups: Lay one cucumber ribbon flat on your work surface. Spread about 1 tablespoon (15 g) of the cream cheese mixture evenly along its length, leaving about a half-inch border on the edges. Add optional extras like smoked salmon or capers if desired.
  4. Roll and secure: Starting at one end, gently but firmly roll the cucumber ribbon into a tight spiral. Place the roll seam-side down on a platter. Repeat with remaining ribbons and filling.
  5. Chill and serve: Refrigerate the roll-ups for at least 15 minutes before serving to let flavors meld and make them easier to handle. Serve cold as a refreshing snack or appetizer.
