Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together 2 ¾ cups (345g) all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. Using a stand or hand mixer, beat 1 cup (227g) softened unsalted butter with 1 ½ cups (300g) granulated sugar on medium speed until light and fluffy, about 3 to 4 minutes.
  4. Beat in 1 large room temperature egg and 1 teaspoon vanilla extract until just combined.
  5. Gradually add the flour mixture in batches, mixing on low speed just until incorporated. Chill dough for 15 minutes if too sticky.
  6. Roll the dough into small balls about 1 ½ inches (3.8 cm) in diameter. Place them 2 inches (5 cm) apart on the baking sheets. Flatten each ball gently to about ¼ inch (0.6 cm) thick.
  7. Bake for 8 to 10 minutes until edges are just golden but centers remain soft. Remove and let cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  8. While cookies cool, beat 8 oz (225g) softened cream cheese and ½ cup (115g) softened butter together until smooth and creamy. Gradually add 2 cups (240g) powdered sugar and 1 teaspoon vanilla extract. Add milk 1 tablespoon at a time to reach spreadable consistency.
  9. Spread a generous layer of cream cheese frosting evenly on each cooled cookie.
  10. Arrange sliced strawberries, blueberries, kiwi slices, and mandarin segments over the frosting. Garnish with fresh mint leaves if desired.
  11. Serve immediately or chill for 30 minutes to let frosting set. Best enjoyed within 2 days.
