  • 2 ripe mangoes, peeled and julienned
  • 2 cups green cabbage, shredded
  • 1 medium red bell pepper, thinly sliced
  • 1 cup carrots, shredded
  • ½ cup fresh cilantro, chopped
  • 3 green onions, thinly sliced
  • ½ cup roasted peanuts, roughly chopped
  • ¼ cup creamy peanut butter
  • 3 tablespoons fresh lime juice
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 23 tablespoons warm water
  • Optional: pinch of red pepper flakes or a dash of sriracha

Instructions

  1. Peel and julienne the mangoes into thin strips. Shred the green cabbage finely. Slice the red bell pepper into thin strips and shred the carrots.
  2. Roughly chop the roasted peanuts and finely chop the cilantro and green onions. Set aside separately.
  3. In a small bowl, whisk together peanut butter, fresh lime juice, soy sauce, honey, minced garlic, and grated ginger. Slowly add warm water, one tablespoon at a time, whisking until the dressing reaches a smooth, pourable consistency. Add red pepper flakes or sriracha if desired.
  4. Combine the shredded cabbage, mango, bell pepper, and carrots in a large bowl. Pour the peanut lime dressing over the salad and toss gently but thoroughly to coat all ingredients without bruising the mango.
  5. Sprinkle chopped peanuts, cilantro, and green onions on top. Serve immediately or chill for 10-15 minutes if preferred cooler.

Notes

Do not dress the salad too far ahead to avoid sogginess. Toast peanuts for extra flavor. Use firm but ripe mangoes to maintain texture. Add warm water slowly to adjust dressing consistency. Toss gently to avoid bruising mango.
