  • 4 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 23 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt (optional)

Instructions

  1. Cut about 4 cups of seedless watermelon into 1-inch bite-sized cubes and place in a mixing bowl.
  2. Crumble 1 cup of feta cheese over the watermelon.
  3. Rinse, pat dry, and finely chop 1/4 cup of fresh mint leaves; add to the bowl.
  4. Drizzle 1 tablespoon of extra virgin olive oil over the mixture (optional).
  5. Lightly sprinkle freshly ground black pepper to taste and add a pinch of sea salt if needed.
  6. Gently toss all ingredients together using clean hands or salad tongs, taking care not to bruise the watermelon cubes.
  7. Just before serving, drizzle 2-3 tablespoons of balsamic glaze over the salad.
  8. Serve immediately to enjoy the fresh, crisp texture.

Notes

Use ripe, firm watermelon to avoid sogginess. Add balsamic glaze just before serving to keep salad fresh. For a dairy-free version, substitute feta with vegan cheese or marinated tofu. Handle watermelon gently to maintain cube integrity.
