Fresh Watermelon Mint Agua Fresca with Lime

A refreshing and easy homemade agua fresca combining sweet watermelon, fresh lime juice, and mint for a perfect summer drink.

Ingredients

  • 6 cups (900g) seedless, ripe watermelon chunks
  • 1012 fresh mint leaves, gently bruised
  • Juice of 2 limes (about 2 tablespoons or 30 ml), freshly squeezed
  • 2 cups (480 ml) cold water
  • 12 tablespoons (1530 ml) honey, agave syrup, or simple syrup (optional)
  • Ice cubes for serving

Instructions

  1. Cut about 6 cups (900g) of seedless watermelon into chunks and remove any seeds.
  2. Place the watermelon chunks in a blender and pulse until smooth, about 30 seconds to 1 minute.
  3. Pour the blended watermelon through a fine mesh strainer or cheesecloth into a large bowl or pitcher, pressing the pulp gently to extract juice.
  4. In a serving pitcher, add 10-12 fresh mint leaves and gently muddle with a muddler or wooden spoon to release oils without bitterness.
  5. Add the freshly squeezed lime juice and 2 cups (480 ml) cold water to the pitcher with the mint and stir gently.
  6. Taste and stir in 1-2 tablespoons (15-30 ml) of sweetener if desired.
  7. Add plenty of ice cubes to the pitcher or serve over ice in individual glasses. Garnish with a mint sprig or lime wheel if desired.

Notes

Do not over-muddle the mint to avoid bitterness. Use ripe watermelon for natural sweetness and less added sweetener. Add mint and ice just before serving for best flavor. Store leftovers in a sealed container in the fridge for up to 2 days without mint leaves to prevent bitterness.
