Ingredients

Scale
  • 2 ¾ cups (330g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (230g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 2 cups (240g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 2 ripe bananas, sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large rimmed baking sheet (at least 15×10 inches) with parchment paper.
  2. In a medium bowl, whisk together 2 ¾ cups flour, 1 teaspoon baking soda, ½ teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. In a large bowl, beat 1 cup softened butter and 1 ½ cups sugar using an electric mixer on medium speed until fluffy, about 3-4 minutes.
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until fully incorporated.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Do not overmix.
  6. Transfer the dough onto the prepared baking sheet and gently press it into a large rectangle or oval about ½ inch thick. Smooth the surface with a spatula.
  7. Bake for 18-22 minutes until edges are lightly golden but center is still soft. Avoid overbaking.
  8. Let the cookie cool on the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the cream cheese frosting by beating 8 oz softened cream cheese and ½ cup softened butter together until smooth and creamy, about 2-3 minutes.
  10. Gradually add 2 cups powdered sugar and 1 teaspoon vanilla extract, beating until fluffy.
  11. Spread an even layer of the cream cheese frosting over the cooled cookie, leaving about ¼ inch from the edges.
  12. Arrange the fruit: use blueberries to form the top-left corner square (stars), then alternate sliced strawberries and banana slices to create red and white stripes.
  13. Refrigerate the fruit pizza for at least 30 minutes before slicing to let the frosting set.
  14. Use a sharp knife to cut into squares or wedges and serve.

Notes

Use softened butter and cream cheese for best texture. Toss banana slices in lemon juice to prevent browning. The cookie can be baked a day ahead and stored airtight. Refrigerate after assembly to let frosting set and flavors meld. For dairy-free, use coconut cream cheese and vegan butter substitutes. For gluten-free, use almond or gluten-free flour blends.
