  • 6 to 8 pounds fully cooked bone-in ham (spiral-cut preferred)
  • 1 cup brown sugar (light or dark)
  • 1/4 cup Dijon mustard
  • 1/4 cup whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • Pinch of freshly ground black pepper
  • 2 pounds carrots, peeled and cut into sticks or baby carrots
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove packaging and place the ham on a roasting rack inside your pan, fat side up. Lightly score the ham in a diamond pattern.
  3. In a mixing bowl, whisk together brown sugar, Dijon mustard, whole grain mustard, apple cider vinegar, honey, and black pepper until smooth and thick.
  4. Use a basting brush to spread about half the glaze evenly over the ham, covering the scored surface and sides.
  5. Place the ham in the oven and roast for about 60 minutes (approximately 10 minutes per pound). Baste with the remaining glaze every 15 minutes. Tent with foil if glaze darkens too quickly.
  6. While the ham roasts, toss the carrots with olive oil, salt, pepper, and optional fresh thyme or rosemary. Arrange them on a baking sheet in a single layer.
  7. About 30 minutes before the ham is done, place the carrots in the oven and roast for 25-30 minutes, turning once halfway through, until tender and caramelized.
  8. Check that the ham reaches an internal temperature of 140°F (60°C). The glaze should be bubbly and caramelized.
  9. Remove the ham from the oven and let it rest for 10-15 minutes before slicing.
  10. Slice the ham and serve alongside the roasted carrots. Spoon any pan juices over the top for extra flavor.

Use a meat thermometer to ensure the ham reaches 140°F for juicy perfection. Apply glaze in thin, frequent layers to avoid burning. Let the ham rest before slicing to lock in juices. You can substitute maple syrup for honey or use yellow mustard if Dijon is unavailable. Roasted carrots can be swapped with parsnips or sweet potatoes for seasonal variation.
