  • ½ teaspoon ground cloves
  • ¼ teaspoon cinnamon (optional)
  • ½ cup water

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove any packaging from the ham and score the surface in a diamond pattern about ¼ inch deep. Pat dry with paper towels.
  3. Arrange pineapple slices evenly over the ham, tucking them slightly into the scored lines. Secure with toothpicks if needed.
  4. In a small saucepan, combine honey, brown sugar, Dijon mustard, ground cloves, cinnamon, and water. Heat over medium, stirring until sugar dissolves and mixture thickens slightly (about 4-5 minutes). Remove from heat.
  5. Using a basting brush, generously coat the ham and pineapple slices with the glaze.
  6. Place the ham on a rack in a roasting pan and roast for about 90 minutes, basting every 20 minutes with remaining glaze. The internal temperature should reach 140°F (60°C).
  7. Switch oven to broil on high for the last 3-5 minutes to caramelize the crust, watching carefully to avoid burning.
