  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227 g) unsalted butter, softened
  • 1 ¾ cups (350 g) granulated sugar
  • 4 large eggs, room temperature
  • ¼ cup (60 ml) fresh lemon juice
  • Zest from 2 medium lemons
  • 1 cup (240 ml) buttermilk, room temperature
  • 1 ½ cups (225 g) fresh blueberries, rinsed and patted dry
  • 1 teaspoon vanilla extract
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Grease and line two 8-inch cake pans with parchment paper. Preheat oven to 350°F (175°C).
  2. In a medium bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer until light and fluffy, about 3 to 5 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in fresh lemon juice, lemon zest, and vanilla extract.
  6. Add the dry ingredients in three additions, alternating with buttermilk, beginning and ending with flour. Mix gently but thoroughly after each addition.
  7. Toss blueberries with a tablespoon of flour to coat, then gently fold into the batter.
  8. Divide batter evenly between prepared pans and smooth tops.
  9. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean and cakes spring back when lightly pressed.
  10. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  11. For the frosting, beat cream cheese and softened butter until smooth.
  12. Gradually add powdered sugar, then mix in lemon juice and optional lemon zest until creamy.
  13. Place one cake layer on a serving plate and spread a generous layer of frosting on top.
  14. Add the second layer and frost the top and sides evenly.
  15. Chill the cake for 15 minutes and smooth any rough edges if desired.

Notes

Coat blueberries with flour before folding to prevent sinking. Use room temperature ingredients for best texture. Chill frosting if too soft before spreading. Let cakes cool completely before frosting to avoid melting. An oven thermometer helps ensure proper baking temperature.
