A light, bright, and utterly refreshing frozen peach bellini slushie perfect for summer sips. Made with frozen peaches, peach nectar, sparkling wine, and a hint of lemon juice, this easy recipe delivers a smooth, bubbly texture that’s perfect for hot days.

  • 2 cups (300 grams) frozen peaches, sliced
  • 1/2 cup (4 fl oz) peach nectar, preferably no added sugars
  • 1 cup (8 fl oz) chilled sparkling wine or prosecco (or sparkling water/lemon-lime soda for mocktail)
  • 1 tablespoon (0.5 fl oz) fresh lemon juice
  • 1 to 2 tablespoons (0.5 to 1 fl oz) simple syrup, optional
  • 1/2 cup (4 oz) ice cubes, optional
  • Mint leaves for garnish, optional

Instructions

  1. Freeze the peaches if using fresh: peel, pit, and slice into chunks, then freeze for at least 4 hours or overnight.
  2. Add frozen peaches and peach nectar to a high-speed blender. Pulse on high for about 30 seconds until chunky but smooth, forming a thick slush.
  3. Add fresh lemon juice and simple syrup. Blend again for 10-15 seconds to combine. Adjust sweetness by adding more syrup if desired.
  4. Optionally add ice cubes for extra frostiness and blend for another 15 seconds. Avoid over-blending to prevent watery texture.
  5. Transfer the slush to a large mixing bowl or pitcher. Slowly stir in chilled sparkling wine to keep bubbles intact. Do not blend at this stage.
  6. Serve immediately in chilled glasses or mason jars. Garnish with fresh mint leaves and a thin peach slice if available.

Notes

Freeze peaches well ahead to ensure a smooth slushie texture. Blend sparkling wine in at the end by stirring to preserve bubbles. Serve immediately for best fizz. Store peach slush base (without sparkling wine) in freezer up to 2 weeks. Add sparkling wine just before serving.
