Refreshing Frozen Watermelon Agua Fresca with Mint and Lime

A quick and easy summer drink blending frozen watermelon, fresh mint, lime juice, and a touch of sweetener for a refreshing, icy slushy beverage.

Ingredients

  • 4 cups (600g) frozen watermelon chunks, seedless if possible
  • 1012 fresh mint leaves, washed and roughly torn or lightly muddled
  • Juice of 2 medium limes (about 3 tablespoons or 45ml), freshly squeezed
  • 1 cup (240ml) water
  • 12 tablespoons (12-24g) granulated sugar, honey, or agave syrup (adjust to taste)
  • Pinch of sea salt (optional)

Instructions

  1. Wash the fresh mint leaves thoroughly and gently muddle them with a spoon or muddler to release their oils and aroma without pulverizing.
  2. Add 4 cups (600g) of frozen watermelon chunks to the blender.
  3. Pour in the juice of 2 freshly squeezed limes (approx. 45ml) and 1-2 tablespoons (12-24g) of your chosen sweetener.
  4. Add 1 cup (240ml) of cold water to adjust the consistency.
  5. Blend everything on high speed for about 30-45 seconds until smooth and slightly frothy, stopping to scrape down the sides if needed.
  6. Taste and adjust sweetness or consistency by adding more sweetener or water and blending again as needed.
  7. Serve immediately in tall glasses, garnished with a sprig of fresh mint or a thin lime wedge.

Notes

Use frozen watermelon chunks instead of ice cubes to avoid diluting the flavor and achieve a slushy texture. Gently muddle mint to release oils without bitterness. Blend right before serving to maintain icy texture. Store leftovers in the fridge up to 24 hours and refresh with frozen watermelon chunks or ice before serving.
