Refreshing Pineapple Coconut Agua Fresca

A quick and easy tropical drink blending fresh pineapple, coconut water, and lime juice for a refreshing and hydrating beverage perfect for summer.

Ingredients

  • 3 cups fresh pineapple, peeled and chopped
  • 2 cups coconut water (natural, unsweetened preferred)
  • Juice of 1 medium lime (about 2 tablespoons)
  • 1 to 2 tablespoons honey or agave syrup (adjust to taste)
  • 1 to 1.5 cups cold water (for diluting)
  • Ice cubes (as needed to serve chilled)

Instructions

  1. Peel and chop about 3 cups (450g) of fresh pineapple into chunks.
  2. Add pineapple chunks and 2 cups (475ml) of coconut water into a blender. Blend on high for about 1 minute until smooth.
  3. Pour in the juice of 1 medium lime (about 2 tablespoons or 30ml). Add 1 to 2 tablespoons of honey or agave syrup. Blend again for 10-15 seconds to combine. Taste and adjust sweetness or acidity if needed.
  4. Add 1 to 1.5 cups (240-355ml) of cold water to thin the drink to preferred consistency. Blend briefly for 5 seconds to mix.
  5. Optional: Strain the mixture through a fine mesh strainer or nut milk bag for a smoother texture, pressing pulp to extract liquid. Otherwise, leave pulp for more fiber and texture.
  6. Serve over ice cubes. Garnish with a lime wedge or fresh mint sprig if desired. Makes about 4 servings.

Notes

Use ripe pineapple for best sweetness and flavor. Blend thoroughly to avoid fibrous chunks. Adjust sweetener based on pineapple ripeness. Add a pinch of salt if drink tastes too tart. Serve chilled and consume within 2 days. Optional additions include fresh mint, ginger, or coconut milk for creaminess.
