Refreshing Watermelon Mint Mojito Cooler

A quick and easy homemade summer drink combining sweet watermelon, fresh mint, lime, and soda water for a refreshing and lively cooler. Perfect for any occasion, with an optional spirited twist.

  • 4 cups watermelon, cubed and deseeded (preferably ripe and juicy)
  • 1520 fresh mint leaves, washed and gently bruised
  • 2 medium limes, juiced (plus extra wedges for garnish)
  • 2 tablespoons granulated sugar or simple syrup (adjust based on watermelon sweetness)
  • 1 to cups chilled soda water or sparkling water
  • Ice cubes as needed
  • Optional: 2 ounces white rum or tequila per serving

Instructions

  1. Cut about 4 cups (600g) of ripe watermelon into chunks, removing seeds carefully. Place the chunks into a blender or food processor. Blend until smooth, about 30 seconds.
  2. Pour the watermelon puree through a fine mesh sieve into a large pitcher to remove any pulp for a silky finish. (Skip straining for thicker texture if preferred.)
  3. Juice 2 medium limes (about 3 tablespoons or 45ml). Set aside the fresh juice and keep a few wedges for garnish.
  4. Place the fresh mint leaves (15-20) in the pitcher. Using a wooden muddler or the back of a spoon, press gently just enough to bruise the leaves and release their oils without pulverizing.
  5. Stir in 2 tablespoons (25g) of granulated sugar or simple syrup into the pitcher. Mix until dissolved. Taste the watermelon puree first and adjust sugar if needed.
  6. Pour in the lime juice and stir the mixture gently.
  7. Add 1 to 1½ cups (240–360ml) of chilled soda water to the pitcher, depending on desired fizz and lightness.
  8. Fill the pitcher with ice cubes to chill the mixture. If desired, add 2 ounces (60ml) of white rum or tequila per serving and stir gently to combine.
  9. Pour the cooler into tall glasses filled with ice. Garnish with a lime wedge and a sprig of fresh mint.
