A simple, five-ingredient fall salad featuring crisp apples, salty feta, toasted pecans, peppery arugula, and a drizzle of maple syrup. It’s quick, cozy, and perfect for chilly nights.

Ingredients

Scale
  • 5 oz (140g) arugula
  • 1 large apple (about 200g), such as Honeycrisp or Fuji, cored and thinly sliced
  • 4 oz (115g) feta cheese, crumbled
  • 1/2 cup (60g) pecans, toasted
  • 2 tablespoons (30ml) pure maple syrup

Instructions

  1. Preheat oven to 350°F (175°C). Spread pecans on a small baking sheet in a single layer. Toast for 5-7 minutes until fragrant and slightly darker. Let cool.
  2. Wash the apple. Core and slice into thin, even slices (about 1/4-inch thick). If not serving immediately, toss with a squeeze of lemon juice to prevent browning.
  3. Pat feta dry with a paper towel. Crumble into irregular, bite-sized pieces.
  4. Place arugula in a large mixing bowl. Remove any thick stems or wilted leaves.
  5. Add sliced apple, toasted pecans, and crumbled feta to the bowl. Drizzle with maple syrup. Gently toss until evenly combined.
  6. Serve immediately.

Notes

Toast pecans for best flavor. Use pure maple syrup, not pancake syrup. Slice apples just before serving to prevent browning. For a dairy-free version, omit feta or use plant-based alternative. Store undressed components separately for up to 24 hours.
