Instructions

  1. Activate the yeast: In a large mixing bowl, whisk together warm beer (around 100°F/38°C), sugar, and yeast. Let sit for 5-7 minutes until frothy.
  2. Make the dough: Add melted butter and salt to the yeast mixture. Gradually mix in flour one cup at a time, stirring to combine. Knead on a floured surface for about 8 minutes until smooth and elastic.
  3. First rise: Place dough in a lightly greased bowl, cover with a towel, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  4. Prepare cheese filling: Mix shredded cheddar, softened cream cheese, garlic powder, and chopped chives in a bowl. Set aside.
  5. Make baking soda bath: Bring water and baking soda to a boil in a large pot.
  6. Shape bread: Punch down dough and roll out into a 12×15-inch rectangle. Spread cheese filling evenly over dough.
  7. Cut and assemble: Slice dough into 2-inch squares. Dip each square into boiling baking soda bath for 20-30 seconds, shake off excess water, and layer randomly in a greased baking pan.
  8. Final rise: Cover assembled bread with a towel and let rest for 20-30 minutes.
