Ingredients

Scale
  • ½ cup (1 stick) unsalted butter, melted
  • 1 cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ cup light corn syrup
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract (preferably bourbon vanilla)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 cups pecan halves
  • 1 cup all-purpose flour
  • ½ cup granulated sugar (for topping)
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt (for topping)
  • ¼ cup (½ stick) unsalted butter, cold and cubed
  • ½ cup whole milk
  • 1 teaspoon vanilla extract (for topping)
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Place a 9×9-inch baking dish on a rimmed baking sheet.
  2. Make the pecan filling: In a large mixing bowl, whisk together melted butter, packed light brown sugar, granulated sugar, light corn syrup, room temperature eggs, vanilla extract, ground cinnamon, and salt until smooth and well combined.
  3. Fold in the pecan halves until they are all coated. Do not overmix.
  4. Pour the filling into the prepared baking dish and spread evenly.
  5. Make the cobbler topping: In a medium mixing bowl, whisk together flour, granulated sugar, baking powder, and salt. Add cold cubed butter and cut it into the flour using a pastry cutter, forks, or your fingers until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  6. Add whole milk and vanilla extract to the flour mixture. Stir with a fork until just combined. The dough will be thick and slightly sticky. Do not overmix.
  7. Drop spoonfuls of the dough evenly over the pecan filling. The gaps allow the filling to bubble up.
  8. Bake for 40-45 minutes, until the topping is golden brown and a toothpick inserted into the topping comes out clean. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  9. Cool on a wire rack for at least 10 minutes before serving.
  10. Serve warm with a generous scoop of vanilla ice cream.

Notes

For best results, use room temperature eggs and milk. Toast pecans in a dry skillet for 3-4 minutes before using for extra flavor. Do not overmix the topping. Let the cobbler rest for 10 minutes before serving to allow the filling to set. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the microwave or oven.
