Ingredients

Scale
  • 1 (5-6 pound) bone-in, skin-on turkey breast
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1 cup whole berry cranberry sauce
  • 1/2 cup fresh orange juice
  • 2 tablespoons orange zest
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon black pepper
  • 1 orange, quartered
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 3 cloves garlic, smashed
  • 1/2 cup chicken broth

Instructions

  1. Take the turkey out of the fridge 45 minutes before cooking. Pat it completely dry with paper towels.
  2. Preheat your oven to 375°F (190°C). Position the rack in the lower third of the oven.
  3. In a small bowl, combine the softened butter, salt, pepper, dried thyme, dried rosemary, and garlic powder. Mix into a paste.
  4. Gently loosen the skin from the meat on the turkey breast. Spread half of the butter mixture directly onto the meat under the skin, then spread the remaining butter all over the outside of the skin.
  5. In a small saucepan over medium heat, combine the cranberry sauce, fresh orange juice, orange zest, honey, Dijon mustard, vanilla extract, and black pepper. Whisk and bring to a gentle simmer. Cook for 5-7 minutes until slightly thickened. Remove from heat.
  6. Place the quartered orange, rosemary sprigs, thyme sprigs, and smashed garlic cloves in the bottom of a roasting pan. Pour in the chicken broth. Place the turkey breast on a rack, breast side up.
  7. Roast the turkey for 30 minutes uncovered. Then reduce the oven temperature to 350°F (175°C).
  8. Brush a generous layer of the cranberry orange glaze over the turkey. Return to the oven. Every 20 minutes, brush on another layer of glaze and spoon pan juices over the turkey. Repeat 3-4 times.
  9. Total cooking time is about 1 hour 30 minutes to 1 hour 45 minutes. Start checking internal temperature at 1 hour 15 minutes. Insert an instant-read thermometer into the thickest part of the breast without touching bone. Target 160°F (71°C).
  10. Remove the turkey from the oven and transfer to a cutting board. Loosely tent with aluminum foil and let rest for 15-20 minutes.
  11. Slice the turkey breast against the grain into even slices. Drizzle with remaining glaze or serve on the side.

Notes

Don’t skip the resting step—it ensures juicy meat. If the glaze gets too dark toward the end, tent the turkey loosely with foil. Save the pan juices to make a quick gravy.
