A creamy, aromatic kabocha squash curry soup that comes together in under 45 minutes. Perfect for impressing guests or saving you at the last minute, this velvety soup balances sweet roasted squash with warm curry spices and rich coconut milk.

Ingredients

Scale
  • 1 medium kabocha squash (about 2–3 pounds)
  • 2 tablespoons olive oil or coconut oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1 can (14 ounces) full-fat coconut milk
  • 3 cups vegetable broth or chicken broth, low-sodium
  • 1 tablespoon maple syrup or honey (optional)
  • Salt and black pepper to taste
  • Optional toppings: toasted pumpkin seeds, coconut cream, fresh cilantro, lime wedges, red pepper flakes

Instructions

  1. Preheat oven to 400°F (200°C). Cut kabocha squash in half, scoop out seeds, and cut into 1-inch chunks (leave skin on). Toss with 1 tablespoon oil and a pinch of salt. Spread on a parchment-lined baking sheet and roast for 25-30 minutes, flipping halfway, until fork-tender and caramelized.
  2. While squash roasts, heat remaining 1 tablespoon oil in a large pot over medium heat. Add diced onion and cook 5-6 minutes until translucent and lightly browned.
  3. Add minced garlic and grated ginger; cook 1 minute until fragrant.
  4. Add curry powder, turmeric, and cumin. Stir constantly for 30-60 seconds until fragrant and paste-like.
  5. Add roasted squash chunks and broth. Stir, scraping up any browned bits. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 10 minutes.
  6. Stir in full-fat coconut milk and maple syrup (if using). Simmer 2-3 minutes. Season with salt and pepper to taste.
  7. Remove from heat. Blend with an immersion blender until smooth, or carefully blend in batches in a regular blender (let cool slightly first, remove center cap, cover with towel).
  8. Ladle into bowls. Garnish with a swirl of coconut cream, toasted pumpkin seeds, fresh cilantro, and a squeeze of lime. Serve hot with crusty bread or naan.

Notes

Roast the squash instead of boiling to concentrate sweetness. Toast spices in oil for deeper flavor. For a spicier version, add 1-2 teaspoons red curry paste or a chopped Thai chili. Soup tastes even better the next day. Freezes well for up to 3 months.
