These Easy Mini Turkey Meatball Sub Sliders are quick, delicious, and perfect for game day or weeknight dinners. Made with ground turkey, marinara, and provolone, they come together in about 30 minutes.

Ingredients

Scale
  • 1 lb (450g) ground turkey (93% lean)
  • ½ cup (60g) breadcrumbs (plain or Italian-style)
  • 1 large egg
  • ¼ cup (25g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1½ cups (360ml) marinara sauce
  • 12 slider buns (e.g., Hawaiian rolls)
  • 6 slices provolone cheese, halved
  • 2 tablespoons unsalted butter, melted
  • ¼ teaspoon garlic powder (for butter)
  • Dried parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the middle of the oven.
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, egg, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper. Mix gently with your hands until just combined.
  3. Using a small cookie scoop or your hands, form the mixture into 12 equal-sized meatballs (about 1.5 tablespoons each). Roll gently between your palms until smooth.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the meatballs for 3-4 minutes per side, turning with tongs, until all sides are well browned.
  5. Reduce heat to medium-low. Pour marinara sauce around the meatballs (not over them). Cover and simmer for 5-7 minutes, until meatballs are cooked through (internal temperature of 165°F / 74°C).
  6. While meatballs simmer, slice slider buns in half horizontally if needed. Place bottom halves on a baking sheet. Mix melted butter with ¼ teaspoon garlic powder; brush onto cut sides of top buns.
  7. Assemble sliders: Place one meatball on each bottom bun. Spoon extra sauce over meatballs. Top each with a half-slice of provolone cheese. Place top buns on and brush tops with remaining garlic butter.
  8. Bake for 8-10 minutes, until cheese is melted and bun tops are golden brown.
  9. Let sliders rest for 2-3 minutes before serving. Sprinkle with dried parsley if desired. Serve warm.

Notes

For best texture, use fresh ground turkey (not frozen/thawed multiple times). Let the meatball mixture rest for 5 minutes after mixing to help bind. Avoid overmixing to prevent tough meatballs. If making ahead, prepare meatballs through step 5, cool, and refrigerate for up to 2 days; reheat before assembling.
