This one-skillet cornbread dressing is a quick and easy weeknight version of the classic Thanksgiving side. With crispy edges, savory sausage, and earthy sage, it delivers all the comfort without the fuss.

Ingredients

Scale
  • 4 cups crumbled day-old cornbread
  • 1 tablespoon olive oil
  • 1 pound ground breakfast sausage (preferably sage-flavored)
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 celery stalks, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 2 teaspoons dried sage (rubbed sage preferred)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 1/2 cups low-sodium chicken broth
  • 1 large egg, lightly beaten

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the sausage: Place an oven-safe skillet over medium-high heat. Add olive oil and ground sausage. Cook, breaking it up, until browned (5-7 minutes). Transfer sausage to a plate, leaving about 2 tablespoons of rendered fat in the skillet.
  3. Sauté the aromatics: Reduce heat to medium. Add diced onion and celery to the skillet with the sausage drippings. Cook for 4-5 minutes until onions are translucent and celery softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Combine the base: Turn off heat. Add crumbled cornbread and cooked sausage back to the skillet. Sprinkle with dried sage, thyme, salt, and pepper. Gently toss until cornbread is well-coated.
  5. Add the liquid: In a small bowl, whisk together chicken broth and beaten egg. Pour evenly over the cornbread mixture. Gently fold until liquid is absorbed. The mixture should be moist but not soupy.
  6. Bake to perfection: Press the mixture into an even layer in the skillet (not too tightly). Bake for 20-25 minutes until top is golden brown and edges are crispy. Center should be set and firm to the touch.
  7. Rest and serve: Remove from oven and let rest for 5 minutes. Scoop out portions, including crispy edges.

Notes

Use day-old cornbread for best texture; fresh cornbread will become mushy. Do not overmix once liquid is added. For extra crispy edges, broil for 1-2 minutes after baking. The egg is essential for binding.
