These roasted delicata squash rings are caramelized on the outside, tender on the inside, and drizzled with maple syrup for a sweet-savory side dish that converts even the biggest squash skeptics. Ready in about 30 minutes, they’re perfect for dinner parties or weeknight meals.

Ingredients

Scale
  • 2 medium delicata squash
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt (Diamond Crystal)
  • 6–8 sprigs fresh thyme (leaves stripped)
  • Optional garnish: flaky sea salt and fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash and dry the delicata squash. Trim off the ends, then slice crosswise into ½-inch thick rings. Remove seeds with a spoon or your fingers.
  3. In a large bowl, whisk together olive oil, smoked paprika, garlic powder, and kosher salt. Add squash rings and fresh thyme leaves; toss until well coated.
  4. Arrange rings in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  5. Roast for 15 minutes. Remove from oven, flip each ring gently with a spatula.
  6. In a small bowl, mix maple syrup with a pinch of salt.
  7. Return baking sheet to oven and roast for another 10-15 minutes, until rings are tender and edges are deeply golden and caramelized.
  8. Remove from oven. While hot, drizzle maple mixture over the rings. Transfer to a serving platter, sprinkle with flaky sea salt and parsley if desired. Serve warm.

Notes

For best caramelization, do not crowd the pan. Use two baking sheets if needed. Add maple syrup at the end to prevent burning. For a spicy version, add ¼ teaspoon cayenne pepper to the maple drizzle. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 350°F oven for 5-7 minutes.
