This easy breakfast casserole with sausage and hash browns is a budget-friendly, kid-approved dish that’s perfect for lazy weekends and holiday mornings. It features a crispy top and tender, custard-like interior, and can be assembled the night before for a stress-free morning.

Ingredients

Scale
  • 1 pound ground breakfast sausage
  • 30 ounces frozen shredded hash browns, thawed
  • 2 ½ cups shredded cheddar cheese, divided
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced (optional)
  • 8 large eggs
  • 1 ½ cups whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large skillet over medium-high heat, cook the ground sausage, breaking it up, until browned (6-8 minutes). Drain excess fat and set aside.
  3. In the same skillet, sauté the diced onion and bell pepper over medium heat for 3-4 minutes until softened.
  4. Spread the thawed hash browns evenly in the prepared baking dish, pressing down gently.
  5. Sprinkle the cooked sausage over the hash browns, followed by the sautéed vegetables. Top with 2 cups of shredded cheddar cheese.
  6. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika until smooth and pale yellow.
  7. Slowly pour the egg mixture evenly over the casserole. Gently poke through layers with a fork to help eggs seep down.
  8. Cover the dish with aluminum foil and bake for 35 minutes.
  9. Remove foil, sprinkle remaining ½ cup cheese on top, and bake uncovered for 10-15 minutes until golden brown and a knife inserted in the center comes out clean.
  10. Let the casserole rest for 5-10 minutes before slicing. Garnish with sliced green onions and serve warm.

Notes

Thaw hash browns overnight in the fridge to prevent a watery casserole. Let the casserole rest after baking for clean slices. For make-ahead, assemble the night before, cover, and refrigerate; add 5-10 minutes to baking time. For a vegetarian version, substitute sausage with sautéed mushrooms and spinach.
