Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (15 ounces) pumpkin puree (not pumpkin pie filling)
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 cup vegetable broth
  • 1 tablespoon maple syrup
  • Juice of 1 lime

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add diced red bell pepper and cook for 2 more minutes.
  3. Stir in minced garlic and jalapeño (if using) and cook for 30 seconds until fragrant.
  4. Add chili powder, cumin, smoked paprika, oregano, cinnamon, salt, and pepper. Stir constantly for 30-60 seconds until spices are fragrant and coat the vegetables.
  5. Pour in pumpkin puree and diced tomatoes with their juices. Stir well and cook for 2 minutes, scraping up any browned bits from the bottom.
  6. Stir in drained black beans and vegetable broth. Bring to a gentle boil, then reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
  7. Stir in maple syrup and fresh lime juice. Taste and adjust seasoning as needed.
  8. Serve hot with desired toppings.

Notes

Don’t skip blooming the spices in oil—it releases their essential oils for deeper flavor. Use fire-roasted tomatoes for extra smokiness. Let the chili rest for 10-15 minutes before serving for best flavor. This chili tastes even better the next day.
