This creamy sweet potato casserole topped with a crunchy pecan streusel is a happy accident turned family favorite. It’s quick, easy, and perfect for weeknights or holiday feasts.

Ingredients

Scale
  • 3 pounds sweet potatoes, peeled and cubed (about 4–5 medium potatoes)
  • ¼ cup unsalted butter, melted
  • ⅓ cup milk (whole milk or 2% works best)
  • ¼ cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg (optional)
  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ¼ cup unsalted butter, cold and cubed
  • 1 cup pecans, chopped
  • ½ teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Peel and cube sweet potatoes into 1-inch chunks.
  2. Place the cubes in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 12-15 minutes, until fork-tender. Drain in a colander and let sit for a minute to steam dry.
  3. Transfer drained potatoes to a large mixing bowl. Add melted butter, milk, brown sugar, vanilla, salt, cinnamon, and nutmeg. Mash with a potato masher until smooth, or use a hand mixer on low speed for a creamier texture. Taste and adjust seasoning.
  4. Spread the potato mixture into a greased 9×13-inch baking dish. Smooth the top into an even layer.
  5. In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Add cold, cubed butter. Use a pastry cutter, two forks, or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized butter pieces. Stir in chopped pecans.
  6. Sprinkle the streusel evenly over the sweet potato mixture. Do not press down.
  7. Bake for 25-30 minutes, until the topping is golden brown and the edges are bubbly. If the topping is browning too quickly, tent loosely with foil for the last 10 minutes.
  8. Let the casserole rest for 5-10 minutes before serving.

Notes

For best results, keep butter cold for the streusel and toast pecans beforehand. The casserole can be assembled a day ahead (without streusel) and refrigerated. Add 10 minutes to baking time if starting cold.
