  • 1 (14-ounce) package little smokies (cocktail sausages)
  • 1 pound regular-cut bacon (not thick-cut)
  • 1/2 cup packed brown sugar (light or dark)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or aluminum foil. Place a wire rack on top and spray lightly with non-stick spray.
  2. Cut each slice of bacon into three equal pieces (about 45-50 pieces total).
  3. In a small bowl, combine brown sugar, chili powder, garlic powder, smoked paprika (if using), and cayenne pepper. Mix well, breaking up any lumps.
  4. Wrap one piece of bacon around each little smokie, overlapping the ends slightly. Place seam-side down on the wire rack.
  5. Press a generous pinch of the brown sugar mixture onto each bacon-wrapped smokie, coating evenly.
  6. Bake for 25-35 minutes, until bacon is crispy and glaze is bubbly and caramelized. Rotate the pan halfway through.
  7. Let cool on the rack for 5 minutes before serving. The glaze will set slightly.

Notes

Do not use thick-cut bacon; regular-cut crisps better. Pat little smokies dry before wrapping for better adhesion. Watch the last 5 minutes closely to prevent burning. Let rest 5 minutes before serving. Can be assembled up to 24 hours in advance and refrigerated.
