Ingredients

Scale
  • 2 pounds fresh or frozen green beans, trimmed and cut into 2-inch pieces
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced (optional)
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup low-sodium chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup shredded sharp cheddar cheese (optional)
  • 1 1/2 cups crispy fried onions
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Prep the green beans: If using fresh, rinse and trim stem ends, cut into 2-inch pieces. If using frozen, thaw slightly in a colander under cold water and pat dry.
  2. Make the cream sauce: Melt butter in a large skillet over medium heat. Add diced onion and cook 3-4 minutes until soft. Add garlic if using and cook 30 seconds. Sprinkle flour over and stir constantly for 1 minute.
  3. Whisk in milk slowly, then add broth, salt, pepper, garlic powder, and onion powder. Continue whisking until sauce simmers and thickens (2-3 minutes).
  4. Reduce heat to low, stir in shredded cheddar until melted and smooth. Adjust seasoning to taste.
  5. Place green beans in the slow cooker and pour cream sauce over. Stir to coat evenly.
  6. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until beans are tender but still have a slight bite.
  7. About 30 minutes before serving, mix crispy fried onions, panko breadcrumbs, and melted butter in a small bowl.
  8. Sprinkle topping mixture over casserole. Cover and cook on high for 10-15 minutes until golden and crispy. Optionally, broil for 2-3 minutes for extra crunch.
  9. Turn off slow cooker, let casserole rest uncovered for 5 minutes before serving.

Notes

Don’t lift the lid too often during cooking. If sauce is thin at the end, stir in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons cold water and cook on high for 10 minutes. For extra crispy topping, toast panko in a dry skillet before mixing.
