Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
  • Wooden or metal skewers (soak wooden ones in water for 30 minutes)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced (about 2 teaspoons)
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger (optional)
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 green onions, thinly sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)
  • Fresh lemon wedges for serving

Instructions

  1. Make the marinade: In a medium bowl, whisk together honey, soy sauce, minced garlic, olive oil, rice vinegar, grated ginger, and red pepper flakes until well combined.
  2. Prepare the chicken: Pat chicken thighs dry with paper towels and cut into 1.5-inch pieces. Place in a large bowl or resealable bag. Pour about two-thirds of the marinade over the chicken, reserving the rest for basting. Toss to coat. Cover and refrigerate for at least 15 minutes, up to 2 hours.
  3. Soak and thread skewers: If using wooden skewers, soak in water for 30 minutes. Thread chicken onto skewers, leaving about 1/4 inch between pieces.
  4. Preheat grill: Preheat grill to medium-high heat (400-450°F). Clean and oil grates.
  5. Grill skewers: Place skewers on hot grill. Cook for 4-6 minutes on first side without moving. Flip and cook another 4-6 minutes. During the last 2 minutes, brush with reserved marinade. Cook until internal temperature reaches 165°F.
  6. Rest and serve: Transfer to a platter and let rest for 5 minutes. Sprinkle with green onions and sesame seeds. Serve with lemon wedges.

Notes

Don’t marinate longer than 2 hours or the honey can break down the chicken’s texture. Reserve some marinade for basting to create a sticky glaze. Watch the sugar content—honey burns quickly, so apply glaze only during the last 2 minutes of grilling. Let chicken come to room temperature before grilling for even cooking. Use a two-zone fire for better control. Rest the skewers for 5 minutes before serving for juicier chicken.
