Ingredients

Scale
  • 1 cup apple cider (reduced to ¼ cup)
  • 1 ¾ cups all-purpose flour (210 grams)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 large egg, room temperature
  • ½ cup granulated sugar (100 grams)
  • ¼ cup light brown sugar, packed (50 grams)
  • ¼ cup unsalted butter, melted (57 grams)
  • ¼ cup vegetable oil (60 ml)
  • ½ cup buttermilk (120 ml)
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating, 100 grams)
  • 1 ½ teaspoons ground cinnamon (for coating)
  • ¼ cup unsalted butter, melted (for coating, 57 grams)

Instructions

  1. Reduce the apple cider: Pour 1 cup apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until reduced to about ¼ cup (12-15 minutes). Set aside to cool.
  2. Preheat oven to 350°F (175°C). Generously spray a 12-cavity donut pan with non-stick cooking spray.
  3. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Mix wet ingredients: In a medium bowl, whisk together egg, granulated sugar, and brown sugar until smooth and slightly thickened (about 1 minute). Add melted butter, oil, buttermilk, vanilla extract, and cooled reduced cider. Whisk until combined.
  5. Combine wet and dry: Pour wet ingredients into dry ingredients. Stir with a rubber spatula just until no streaks of flour remain. Batter should be thick but scoopable.
  6. Fill donut pan: Transfer batter to a piping bag or zip-top bag. Snip off corner (about ½ inch opening) and pipe batter into each donut cavity, filling about ⅔ to ¾ full.
  7. Bake: Place pan in preheated oven and bake for 10-12 minutes, until donuts spring back when touched and a toothpick inserted comes out clean. Cool in pan for 2 minutes.
  8. Prepare coating: While donuts cool slightly, mix ½ cup granulated sugar and 1½ teaspoons cinnamon in a shallow bowl. Melt ¼ cup butter in a separate small bowl.
  9. Coat donuts: Turn donuts out onto a cooling rack. While still warm, brush each donut with melted butter on both sides. Immediately dip into cinnamon sugar mixture, turning to coat evenly. Place on rack to set.
  10. Repeat with remaining batter: Wipe out donut pan, re-grease, and bake second batch. Coat as above.

Notes

Don’t skip reducing the cider—it concentrates the apple flavor. Room temperature ingredients prevent the butter from seizing. Grease the pan well to prevent sticking. Don’t overbake; start checking at 10 minutes. Coat donuts while warm so the butter melts into the surface.
